The quality of steel, quenching and sharpening is what makes them. This particular blade of Gyuto 210mm is made from White Steel. It is a reactive carbon steel which is easy to sharpen and holds an edge well. White carbon steel enables the sharpest cutting edge for all users. This steel is frequently paired with a kurouchi finish and is often chosen for traditional-style Japanese knives. The beautiful octagonal handle is made from Magnolia wood.
