This particular Yoshihiro Yamawaki Kurouchi Petty 150mm is made from White Steel #2. It is a reactive carbon steel which is easy to sharpen and holds an edge well. White carbon steel enables the sharpest cutting edge that is why is ideal for the first-time users. This steel is frequently paired with a kurouchi finish and is often chosen for traditional-style Japanese knives. The kurouchi finish gives the knife a very characterful, rustic aesthetic prized by many knife enthusiasts but first of all reduces reactivity on carbon steel knives. The beautiful handle in octagonal shape is made from Magnolia wood.
